cacheProtoAggregateStats.cacheServer* is traffic between Squid and
origin servers/peers.

cacheProtoAggregateStats.cache(Client)Http* is traffic between clients
(including peers requesting objects) and Squid. Or more specifically
traffic on the http_port.
