Apache & Expires header

Being a keen advocate of web caching, I've decided I'd better start being a
good citizen and use Expires headers. I'm using Apache 1.1.1 and can't
see any easy way to get this header onto my pages!

Apache supports MetaDir and MetaSuffix but this isn't much use as the
expiry time is fixed in a .meta file and so much be continually updated.

I could use a script that generates expirys on the fly but then how would
I apply that to ordinary .html files?

This sounds like an FAQ but I can't find the answer anywhere! How do other
sites handle the Expires header?
