It does support cacheing to multiple directories since squid 1.0.? (I just
checked some squid 1.0.18 config file I saved.) The directories may be on
different partitions and also drives. Just enter several cache_dir lines in
squid.conf, e.g. (from said old config file)

cache_dir /cache/1
cache_dir /cache/2
