cache_mem is the amount of memory used for in-memory caching (Squid
caches also on disk, of course).
mallinfo shows all the memory used: in-transit objects (the experimental
Squid-NOVM doesn't store them in memory), various tables (the list of all
the cached objects is kept in memory, see the messages in cache.log at
startup), etc.
