Not a Squid question. Better asked on the Red Hat mailing lists.

You install the kernel source RPM and then you will have a linux source
directory (in /usr/src/linux).

You can also modify the SPEC from the SRPM and rebuild from the RPM.
But this is a much harder and less documented task than building a
kernel from sources.

There is a great HOWTO about dealing with the kernel:

Just follow those instructions, including the "Getting the source"
section, and you'll get things figured out eventually.
