Yes, you can change the proxy_auth_realm line in squid.conf

# TAG: proxy_auth_realm
# Specifies the realm name which is to be reported to the client for
# proxy authentication (part of the text the user will see when
# prompted their username and password).
#
#Default:
# proxy_auth_realm Squid proxy-caching web server
