If all my Squid boxes have 1Gb of RAM, what would be the optimal setting for
the memory_pools_limit?

Memory pools is an internal thing in Squid related to how Squid
internally manages memory.

There is not much to fiddle on except for the memory_pools_limit
parameter in squid.conf. I'd recommend you to set this to around 16
MB, less if your system is short on memory.
