This very much depends on

a) Which authentication method you are using. Methods taking a long
time to verify a password requires more helpers.

b) The credentials ttl setting in squid.conf (smaller means more
helpers is required).

The most reliable method is to monitor the helper usage with cachemgr.
If you find that all helpers are used a lot then you need more of
them. If you find that you have helper instances which are never used
then you can probabl decrease a bit..
