If you don't want people to see the version of the squid at the bottom of
the error pages, then you would probbly need to edit the source code and
recompile Squid.

I have had a quick look at the source for squid-2.5.STABLE5 and it looks
like the fiel to edit would be errorpage.c at around line 65
