For example (if you want it to log somplace else as well):

cache_access_log /var/log/squid/access-nocache.log
cache_log /var/log/squid/cache-nocache.log
cache_store_log /var/log/squid/store-nocache.log

pid_filename /var/run/squid-nocache.pid
