Does it mean I have to replace every hexadecimal value with accented characters if I want to retrieve original login ?

Yes.

To guarantee that the resulting log file can be parsed in a meaningful
manner any "odd" data is URL-escaped on the form %nn where nn is the
hexadecimal value of the character.
