Squid does not care and can not know for sure what the IP is when using
a parent. Consider for example sites having more than one IP. How could
Squid know which of the IPs the parent will connect to?

If going direct then the IP Squid connects to is logged.

If going to a parent then the parent is logged, as this is where your
Squid is connecting. To find the final destination IP see the logs of
the parent.
