I have managed to get Squid working and now I need to tweak it.
Firstly, although I am able to access the 'net through squid, it
sometimes takes a while:

I have configured https://www.opendns.com as my named.conf.options
forwarders { 208.67.222.222; 208.67.220.220; };
As you can see, although the correct page is eventually presented to
the browser, it takes just under 2 minutes.
