squid.conf itself, with all its comments, is pretty much self-explained.
Default options are OK most of the time. The ones which needs special
attention, even at the beginning, are, IMHO:

cache_host
cache_mem
cache_swap
ttl_pattern
acl
http_access
icp_access
cache_effective_user
