I have a cron job that cycles the logs daily. Add something like the
following in the crontab of the user squid runs as:

42 7 * * * /usr/local/squid/bin/squid -k rotate

You can set up the number of rotations to keep in squid.conf, so adjust this
to whatever works out best for you with your disk space requirements. Log
sizes don't vary much from week to week (although the difference between
Fridays and weekends is very noticeable for me :-)).
