You can't. What you can do is to hide the version in a comment. In the
error pages insert

<!-- %s -->

Well.. of course you can fully remove the version number or set it to
anything you want by hacking the source if you are so inclined.
Personally I see no reason why to hide version numbers in this manner,
certainly not when running as a proxy, and not when running as an
accelerator either.
