For AD authentication, you'll use LDAP helper, lots of docs on this.

N+1. Load-balance across them if you'd like.
Don't use RAID, use many physical drives.
Choose a Unix-Like OS which you already know well.

AV scanning degrades throughput, and even with scanning in the proxy
you will still need to deploy a local scanner on every Windows client,
if only to catch viral payloads inside HTTPS content.
