Possible yes. Just a matter of changing the code to do what you need.

Easy: Maybe not. Header information isn't available to the access
logging routine in a easy-to-use manner, and the Squid access.log
format only defines a single client IP address field, not a list of
IP addresses..

Workaround: Use log_mime_hdrs.
