- See the option 'high_memory_warning'

- squidclient mgr:info also has some memory statistics, you could write a
cronjob that checks the lines to see if the value goes over a certain
threshold.

- You could use rrdtool too to show some graphs so you can monitor memory
usage almost realtime.
